Episode 06: Carnie’s Cole Slaw
Serves 10-12
Ingredients
- 2 lbs. Of Green cabbage, washed, cut into 1/4's, core removed
- 1 cup of diced green apple (optional)
- 3 large carrots, peeled
- 1 small yellow onion, outer layer peeled off
- 2 stalks of green onion (white & green parts at the very bottom ends removed)
- 1/2 cup of mayonnaise
- 1 tablespoon of plain Greek yogurt
- 1/4 cup mustard (regular or deli style)
- 1 cup of sugar
- 3 teaspoons of apple cider vinegar
- 3/4 teaspoon of black pepper
- 1 teaspoon salt… start with that and add more if you want
- Food Processor (large hole grater attachment)
Recipe Directions
- Add the cabbage, carrots and yellow onion cut to fit through the feeder of food processor.
- Push them through the feeder to grate one at a time into a large bowl. Add the apples and green onions to the bowl and toss to mix. Set aside.
- In a separate medium bowl, whisk the mayo, Greek yogurt, mustard, vinegar, sugar, pepper and salt until well combined and sugar is pretty dissolved.
- Pour mixture over the cabbage mixture and toss really well to coat and combine. Cover with plastic wrap and place in the fridge for at least 2 hours or overnight. Serves 10-12
