Episode 06: Carnie’s Cole Slaw

Serves 10-12

Ingredients

  • 2 lbs. Of Green cabbage, washed, cut into 1/4's, core removed
  • 1 cup of diced green apple (optional)
  • 3 large carrots, peeled
  • 1 small yellow onion, outer layer peeled off
  • 2 stalks of green onion (white & green parts at the very bottom ends removed)
  • 1/2 cup of mayonnaise
  • 1 tablespoon of plain Greek yogurt
  • 1/4 cup mustard (regular or deli style)
  • 1 cup of sugar
  • 3 teaspoons of apple cider vinegar
  • 3/4 teaspoon of black pepper
  • 1 teaspoon salt… start with that and add more if you want
  • Food Processor (large hole grater attachment)

Recipe Directions

  1. Add the cabbage, carrots and yellow onion cut to fit through the feeder of food processor.
  2. Push them through the feeder to grate one at a time into a large bowl. Add the apples and green onions to the bowl and toss to mix. Set aside.
  3. In a separate medium bowl, whisk the mayo, Greek yogurt, mustard, vinegar, sugar, pepper and salt until well combined and sugar is pretty dissolved.
  4. Pour mixture over the cabbage mixture and toss really well to coat and combine. Cover with plastic wrap and place in the fridge for at least 2 hours or overnight. Serves 10-12
